Well, it's been a minute since I've posted, but here's what I just 'canned'!! Zucchini bread! Shelf stable for a year!!! I made zucchini bread batter, preheated the oven to 325°, added a cup of batter to each jar, and baked them in the oven for 55ish minutes!! When a toothpick came out clean, I took them out one by one, wiped the rim, and added the lid and ring!! The lids are popping as I type!!

Awww!!! You are so sweet!!! The holiday weekend had us pretty busy with the mud park and the Willie Nelson concert! And this week was crazy at work!! I'm so glad I stumbled across this little community, it's a nice change of pace to be involved in something so positive! And yes they are great for the hurricane season, or for whenever I get a craving of some bread!! We tried one today, and it's wonderful! I'm probably going to do banana bread, and others! I also have a food dehydrator recipe book coming today, so I'm pretty excited about that too!

I have figured out that next time I am going to use wide mouth jars. I used regular mouth jars, and have to eat the bread with a spoon !! Had I used wide mouth jars, the bread would have slid out like a little mini loaf!!

To be honest, it was kind of rough to watch. He's 93, and barely played or sung anything. We didn't stay for the whole concert, but what we did watch, his band and the crowd sang most of the time. I'm glad I can say I saw him in concert though!
